how to convert to 1 color black from rgb black

i have large document [more 500 pages]  created variety of legacy indesign , pagemaker files. have assmemled various chapters 1 book , exported pdf.

teh pritner jsut came me request change 1 color black instead of rgb , cmyk. document is  black , white - there no color. text gray  , is  reversed out white.

from scouring forums - understand that  has somethign transparency blend space- have set cmyk.

also, have found in acrobat 10 - using -tools - print production - convert colors - , choosing greyscale conversion profile should trick.

is there no way ensure creating teh correct output  in indesign? no global export option?

i using cs 5.5 in windows 7

are there linked images in file? run images greyscale, rgb. find them turning on separations, , turning off black plate. file view reduced, it's easy see errant colors coming from.
