Help with calling user info in a session

i'm (clearly) newbie when comes coldfusion programming, i've learned of basics (queries, calling info sql database, etc).

 

my question is, due being totally unable find example online explains how it, i'm trying create form people can request service (out of selection), , submit info database. still working on database/form, question fact page viewable people logged website. now, can query information database user's info (name, contact info, department), don't understand how call info while logged in info attached form submission database table i'm making.

i'm not looking entire coded response, stuck on 3 different ways (and don't know how different are); i've been exploring possibly doing application.cfc eventually, using cffunction? or cfmethod? reading cfparam, , i'm totally stuck on path persue. know possibly use cfif statement, because that's closest example i've found, read it's not best i'm trying do.

 

can please @ least point me in right direction tags need looking at? much.
